Hello, my name is Matt, and I cannot plate food. There, I got that out. Thanks for listening.

As any reader of this blog knows, I eat a lot of seafood. Some I tire of, and have to change up. Others are always a complete joy to eat on a regular basis. A wonderful grilled mackerel certainly falls into the later (and in case you wonder, hallibut certainly falls into the first).. There is something about the buttery white flesh, and the ever-so thin crispy skin that gets me everytime. I haven’t even started to mention the flavor yet… Pure sea. Some say fishy.. Codswallop to that I say. You get a nice fresh (or really fresh frozen one.. more on that later) mackerel, and it shouldn’t smell fishy. Did I also happen to mention the price of them here in Seattle? Cheap as chips - as far as fish goes anyhow. One mackerel might set me back $6, and is just enough to feed two people. And the final clincher of the deal? It is a really, really healthy fish for you. Very oily, so tons of those good Omega’s. Since they are smaller fish, and relatively fast growing, it has been said that they also rank pretty low on the dirty little polutants side of things too.

Ohhh, my first ever guest post for someone! I have long been a fan of the RasaMalaysia blog. Her food, and her photography are both top notch, simple and clean. Talk about great food styling and photography - the shots always remind me of Donna Hay. Everytime I go to her blog, I end up leaving hungry. It is seriously good.

Bloody hell, this is a week of posts isn’t it!

So, this has been in the works for a little bit. I get itchy feet. I cannot have something for too long, without wanting to make changes - especially when it comes to my blog. This year I want to add a lot more content to this site, and keep it organised - but also make it easy for you lovely visitors to find back dated recipes and so forth. The site also hasn’t had a visual make-over since it was conceived over a year ago.

Secrets of the Red Lantern Cookbook GIVEAWAY!

I love this cookbook. And now you can too! Yep, that is right folks the wonderful publishers of the book (Andrews McNeel) have given me one of these beauties to give away to a lucky winner.

This really is a fantastic book. Great stories, fabulous food, and pretty darn great food photography too. There is a huge range of food too - some pretty incredible looking soups, rice and noodle dishes, plenty of stuff with seafood, course some meat, and veg. Covers everything, and does it really well. I have been cooking from this book through the week for a little while now - there is some great fast dishes in here - like the beef noodle salad I just posted.

Beef, mushroom and rice noodle salad (Goi Bo)

Yep, the meat trip continues. This time though it really isn’t my fault. Honest Gov. You see, this lovely friend of mine, Jaden from SteamyKitchen emailed me a little while back and asked if I would take a couple of photos for the fabulous looking cookbook she has been writing. She needed some product shots done for the ingredients chapter of the book.

Ohh, that sounds like fun I thought. Then the nerves of course set in. I have never taken a shot for a cookbook before - never taken a shot for anything but my blog in all honesty. What if I screwed it up? She is on a tight deadline, and might not have time to reshoot. I ummed and arrred.. Then she told me I could be paid in beef. Kobe beef to be exact.
