Gin and Tonic Lollypop (Popsicle for the Yanks..)

It’s been hot in Seattle. Really bloody hot. Sweat in parts you never knew existed hot. When it gets like this all I want to do is eat salads, and cold vegetable concoctions. These don’t make for the most interesting blog posts, even if they are rather tasty. Tell a lie, I did actually turn the stove on to glaze some carrots last week, but that was it. So there has been a short hiatus with Wrightfood, blame it on this balmy Seattle summer.

Not only does my mind turn to salads in this weather, it also turns to drink. A recent favorite of mine has just been ice cold water with some lemon verbena and rosemary in. Quite, quite lovely and refreshing. Adding a torn up lime leaf too can just make water wonderful.

My family was recently at a party for three of the most amazing people you could ever meet. At this party was a freezer full of OtterPops, which were being consumed in huge numbers by everyone. This got me thinking about frozen treats that quench the thirst.

Gin and tonic has recently become my cocktail of choice, and for this I completely blame my father. When I was growing up, living at home, that was his drink after work. He would come in, set down his briefcase, say hi, and get a G&T. When I got old enough I would make them for him every so often. When I really wasn’t old enough at all I would swig his whilst making it, without him looking (now they know why I would always make his G&T in the pantry… Oddly enough I never got much of a taste for them until recently. Now I get it. It is so bloody crisp and refreshing, simple enough to enjoy, but yet complex enough to drink most days and not get bored of. The only thing I have changed recently has been the simple addition of a sprig of rosemary into the glass. I do like a little herby note to a cocktail, and rosemary just seems to go rather nicely.

You can see where this is going.. A party with frozen popsicle things, and my love of G&T…

I give you, the G&T lollypop, or G&T popsicle for the Americans reading this.

I have no idea why I haven’t thought of this before. It makes sense to me. Hot day, icy refreshment. Icy refreshment on a stick none the less. But not just any stick. A couple of sprigs of rosemary tied together make the perfect stick, with the leafy end in the frozen beverage. Just make sure to use some pretty sturdy sprigs.

The hardest thing was really getting the sprigs of rosemary to stay in the glass whilst the whole thing froze in the freezer. Normally with iced treats as these you let them half-freeze, then you stick in the stick, and bingo – it stays thanks to the half frozen mixture. This does not work so well here however, the leafy end wont stick into half-frozen liquid too well, and it just makes a mess. In the end I put the sprig in when the whole thing was still liquid, and tied the sprig down to the glass. This then gets placed in the freezer until frozen – which takes far too long for my taste.

Gin and Tonic Popsicle Recipe

The whole thing couldn’t be more simple, but it did take a good 10 of these to get them perfect.. Make a gin and tonic (shot of gin, fill glass with tonic water). Taste just to make sure everything is good. Add in some lemon zest if that is your fancy, and pour into a small glass. Tie a couple of sturdy sprigs of rosemary together, and push the leafy end into the small cup of G&T. Carefully tie this round the bottom of the glass (see picture above). Bung in the freezer overnight until well frozen.

I really cannot tell you how much these things have brought me. If I was to never blog again, I would be happy this being my last post (not that Wrightfood will stop any time soon.. just sayin). So, next time you are sweating like a pedophile in a primary school, give a frozen G&T a go, I am now rather addicted to these… but can stop anytime… Promise.

    Heck, I’ve been making them for years by mistake…they’re the Leftover Larrys, fun from the night before. Just thaw and start again!

    You seem to like the unconventional botanicals in your drinks, have you tried Hendrick’s gin? They make a very different kind of gin that I think would go very well with your rosemary.

    Also, have you looked into ice-pop molds? There are zillions out there, but most have a built in stick/drip guard thingy. The old fashioned ones let you use your own sticks and those would be perfect!

    Anywhoo . . . thanks for the great idea! I hadn’t considered adults-only popsicle before. This opens up a world of possibility.

    I can not even begin to tell you how brilliant this is and how disappointed I am that I don’t have one in my hand at this very moment.
    Also, I wanted to tell you that if you ever find yourself in Portland, OR thirsting for a G&T make your way over to clarklewis. ( They use Aviation Gin and housemade tonic. Best darn G&T I have ever had – had they served it to me frozen on a rosemary stick I would have even been more thrilled.

    I though you were taling the mickey with your G&T popsicles (alcohol, freezing?), but truth is, ahh I’d give a leg for a G&T right now. Frozen would be even better. I need to remember the rosemary trick!

    Bloody Brilliant! You almost lost me with the complicated tying of strings, but then I came to my senses and realized that macrame is no bother, especially when gin, tonic and frozen herbs are involved. Brilliant! Can’t wait to try!

    Only you can come up with something as English and delicious as this! How refreshing it is to indulge in this wonderful popsicles. The photograph and rosemary did it….I’m convinced that I need a continuous batch of these treats in the freezer!

    Umh, that looks really good, but shouldn’t you tie the rosemary sticks to the glass before you pour in the G & T…?

    Ah, this is a gorgeous concept. Do you think it would work if I just made a huge tray of G&T icecubes? Imagine them tumbling into a frosted glass and starting to melt at sipping speed…

    I have done this many times (unintentionally) without a stick. I don’t know what tonic you use, but every time I have tried the concoction, the taste of flat/frozen tonic water comes across as cloyingly sweet mixed with bitter. The high carbonation of tonic water adds an acidic component that is necessary. Maybe use a bit of regular water with bitters? I don’t know, but I find the regular brand tonic water to be too sweet.
